The Panel noted initial butterscotch and a curious note of sun lotion. Then things evolved playfully with foam banana sweets, tobacco leaf, hessian and stewed dark fruits. Some hints of fig chutney and strawberry jam lingering beneath. Water revealed a gentle herbaceous quality of dried oregano and mint tea. Then mossy bark, wet leaves, petrichor and fresh brown bread. A drizzle of pumpkin seed oil added richness. The palate opened with bitter cocoa nibs, chilli tomato relish, balsamic glaze and hessian. Some herbal ointments and strong back coffee too. With reduction we got cloves, vanilla toffee, praline, salted milk chocolate, tarragon, stout beers and camphor. Previously in a bourbon hogshead for five years before being transferred to a first fill Spanish oak PX hogshead.
