All the curiosity you would expect from this quirky distillery. Acorn-fed ham, hazelnuts, ice cream wafers and custard cream biscuits all wrapped up in sheep wool. This soft meatiness yields in time to a more directly luscious and expressive tropical fruit quality. Water brings a malty milkshake vibe, along with brandy snaps, beurre noisette and clotted cream on hot cross buns. The palate opens with popcorn, icing sugar, white chocolate mice and the warmth of chilli oil. Some mint tea with sugar and wee notes of dried apple and ginger snap biscuits. Reduction brings out teacakes, condensed milk, strawberry cough syrup and fennel seeds.
