The nose was initially soft and slightly shy, with notes of dried heather, flower honey, pollens and sunflower oil. Then came milk bottle sweets, underripe plums and gooseberry jam. Water brought freshly baked pastries glazed in runny honey, apricot preserve, creamy rice pudding, white chocolate buttons and custard slices. The mouth was full of green and white fruits, cider apple, lychee, pears baked in calvados and grapefruit peel. Hints of bitter lemon in tonic water, lemon sherbet and wintergreen. Reduction brought American cream soda, white stone fruits, mead, lemon barley water and summer fruit teas.
