The first thing to notice was the colour – non-existent, but then do not judge the book by its cover! We poured ourselves liquorice Champagne cocktail; mulled wine made with liquorice, a lightly peated whisky and Champagne all shaken with plenty of ice and then strained into a coupe glass garnished with cranberries and lemon peel. Viscous and malty on the palate neat, subtle spice and tingling of white pepper – very unique! With water a sweet chalkiness, salted lemons and pink grapefruit on the nose, while to taste like a Pinot Blanc wine matured in a peaty Islay cask, very fresh, very clean with a delicate mineral sharpness, certainly in a class by itself – ‘sui generis’.
