Tasting Notes
On the nose, rich caramel sauce poured over vanilla fudge and buttery tablet was underpinned by sunlit gardens and greenhouse blooms. The Panel pictured a cool autumn shower drifting through the woods while savouring heather honey, peach melba and red fruit tea, all layered over stony minerality and the scent of sun-warmed, creaking aged timber. The palate opened with rhubarb and custard sweets, a cheek-tingling mouthfeel yielding to malty apple sauce. Honey-glazed basalt stones met milky tea and cosy wool, with hot cross buns, green apples and nutmeg. Adding water, lemon zest joined raspberry and cream sweets, frozen orange sherbet and orange-infused crème anglaise, layered over toasted bread, toffee apples, coconut and balsa wood. Bright citrus punch faded to chilli caramel, panna cotta and white pepper in the finish.
