The colour was like a sunset over Loch Indaal as we opened a bottle of Oloroso sherry from Sanlucar, that typical coastal scent but with additional aromas of toffee, caramel and candied oranges. A chalky salinity combined with waves of plums, walnuts, rum and raisin as well as dark chocolate made this a truly memorable experience. With water, a real buttery nose of orange shortbread at first before a galleon laden with dried fruits and cocoa beans arrived. On the palate, Serrano ham with a little bread and a drizzle of olive oil and in the finish dark chocolate after-dinner mints. After eleven years in an ex-bourbon hogshead, we transferred this whisky into a 1st fill Oloroso sherry hogshead.
