Tasting Notes
A very pleasant, almost innocuous, scent surprised the Panel. We described the aroma as being like a white chocolate crème brûlée or a crema catalana (Spanish custard flavoured with citrus and cinnamon, and finished with caramelised sugar). On the palate, we found a zesty citrus flavour in a hot chocolate, with white chocolate flakes, vanilla, a dusting of nutmeg and a touch of ginger. After reduction we had vanilla ice cream and lemon sorbet as well as white port-poached pears in a caramel sauce. To taste, it was marshmallows, candyfloss, vanilla macaroons, cinder toffee and runny honey. The finish delivered a refreshing creamy lemonade that was sweet and tangy, with a truly smooth texture.
