A rich aroma of sandalwood aftershave, fresh linens in a warm cupboard, summery forest air, trampled dandelions and sunflower seeds popping in a hot iron pan. Beyond that we got white asparagus, runny honey and dried sage. Water continued this vibrant and fresh evolution with butterbean hummus, light olive oil, lemon peel, trail mix and flapjack with maple syrup. The palate was sweet and prickly when neat. Charred pineapple, fruit salad juices, a dash of paprika and lemon cough drops. With reduction we found candied fruit peels, golden syrup, pollen and heather honey.
