Tasting Notes
The nose neat had bags full of vanilla, perfume in a leather handbag, geraniums, honey glazed melon, candied limes, cinnamon porridge oats as well as fresh sawn wood. On the palate at first a lovely peppery creaminess followed by vanilla bean sorbet with pineapple topping and chilli flakes on candied melon as we finished by chewing a sugar cane stalk. On adding water, we toasted hazelnuts, baked pears with walnuts and honey and prepared a mango chutney. To taste the perfect Ti Punch, Rhum Agricole - a good squeeze of lime and cane syrup in a smallish tumbler, stir until the syrup is dissolved add ice cubes, “Santé”.
