Tasting Notes
On the neat nose, we described the aroma with a word used in the perfume industry – chypre. In our case a mix of sandalwood, sweetly floral and slightly musky, but also fresh citrus and peppermint notes. On the palate a mango salsa with a hint of chilli, as well as cape gooseberry scones with lemon and slices of crispy green apple. Following reduction, we found lavender shortbread, Dutch caramel-filled stroopwafels and candy cane cookies on the nose. To taste, fresh and mouth coating like vanilla ice cream with a pomegranate pear compote and, instead of using lemon juice for a Tom Collins cocktail, we used tangerine juice.
