Tasting Notes

Picture yourself in a sauna, cappuccino in one hand, gingerbread smeared with marmalade in the other, as that’s where the Panel began. Iced caramel frappé, wood shavings, earthy bark, currants and a dusting of cocoa powder followed. The palate delivered further (warm) gingerbread, brown sugar, sugar-roasted almonds, a walnut whip, cigarillo tobacco, a hint of marzipan and plum chutney. With the addition of water, lemon drizzle cake, pineapple juice and tangerine segments were contrasted by a dry, herbal woodiness and a tingle of ginger spice. The finish was a kaleidoscope of flavours, warming spice and coastal salt, ginger and clove, lemon bonbons and salted citrus peel. We found this bold yet comforting, exotic yet familiar. After 13 years in an ex-bourbon barrel, we transferred this to a second fill Spanish oak oloroso hogshead for the remainder of its maturation.
