A barrow load of fruit tumbled from the glass as apples and pears cascaded into underripe cherries and tart raspberries on a new carpet floor. Shortbread brought buttery sweetness that merged with wholemeal flower and clean earth to become freshly baked rhubarb crumble. A dry hedgerow delivered us to the sour tang of sea buckthorn with sliced fresh ginger. The rhubarb crumble was now doused with vanilla custard, the crumbly base becoming more pronounced as it veered towards digestive biscuits. Delicate floral notes appeared on the finish combining parma violets with a hint of peppermint. After spending 8 years in an ex-bourbon hogshead this was transferred to a second-fill charred hogshead for the remainder of its maturation.
