The initial aroma was of gentle spice, pink peppercorns, mint and lemon tea, sweet grapefruit and candy floss drizzled with condensed milk. In time a more menthol aspect appeared, along with rosemary and a Peruvian pisco sour. Reduction gave salted caramel wafers, lime cordial, saffron, cinnamon and star anise. The juniper also became punchier and for fragrant. The palate was initially dry with notes of lemongrass and Thai chicken broth, then notes of black pepper and salted firecrackers. Reduction helped elevate the sweetness and brought Turkish delight, pear drops, lemon peel and elegant notes of hibiscus, grapefruit and coriander.
