Tasting Notes
This dram was calm, cool and collected, as we took a deep breath of glowing embers and sweet barbeque smoke. A bit livelier on the palate, but surprisingly fruity (mango and melon) which was followed by a burst of ashy smoke with that aura of self-assurance. Water added, the nose had lightly smoked custard and sweet beef jerky, while the taste was that of sweet liquorice and honey on burnt toast as we finally leaned back to eat a quince paste, thyme and goat cheese ‘cigar’. At nine years of age, we combined selected hogsheads from the same distillery into a variety of different casks to develop further. This is one of those casks.
