Product Description
The Society is known for exploring unusual and characterful cask maturations that shape distinctive flavour profiles. After spending nine years in an ex-bourbon barrel, this was transferred to a first fill heavily charred barrel for the remainder of its maturation. This secondary cask influence adds deeper oak complexity, richer spice notes and a creamier texture to the spirit. We call this cask influence heavy toast medium char, or HTMC.

Tasting Notes
Under the warm glow of the setting sun, a cooper enjoyed a trio of alligator-charred wood, plum jam and candied pineapple warmed up on a stage of madeira sponge and toasted coconut. The palate hit with jammy dodger snare drums, hazelnut hi-hats, mandarin bass guitars and vocals as smooth as melted vanilla ice cream. Water brought out sun-soaked flower meadows and a tropical mango banjo, while a whisper of gorse and suncream faded into a golden syrup curtain call. The finale was lush, a golden sponge cake soaked in calvados, shortbread fingers dipped in lemon curd, and a hint of toffee passion fruit, leaving the senses swaying in the mellow twilight.
