A joyous concoction of harbour-side aromas delivered rock pools, barnacles and seaweed alongside black olive tapenade and sawdust coated cereals. Ginger warmth on the palate relented to lavender, heather honey and icing sugar while chimney soot and charred wood merged with liquorice stick and mucky engine oil. A dash of water unveiled a more salty and briny side with seaweed, iodine and fennel. Tar on ships decking clung to heather flowers and old rope as wormwood brought woody tannins. Flavours now embraced ash and coal dust with a lingering sweet smoke that wafted over scorched lamb with smoky bacon and blackcurrant jus.
