The panel were a little taken aback by just how perfectly mature and luscious this one was. Immediately the nose was abundant with posh custard, youthful sauternes wines, flower honey, muscovado sugar, ripe yellow fruits and apricot jam. All kinds of nectars, mango syrup, pineapple cordials and a shard of kumquat. Reduction brought out clotted cream, breakfast teas, wild herbs, jasmine flowers, turmeric, white truffle and orange travel sweets. A delicate tang of sushi rice in the background - one to sip in a Japanese whisky bar? The neat palate was extremely juicy, syrupy and sweet. Lots of yellow fruit jams, overripe plums, flapjack, flower honey and citrus curds. A wee hint of camphor underneath added richness. With reduction we found beautifully elegant notes of heather flowers, lanolin, clove oil, caramelised oatmeal, gingerbread and cinnamon dusted breakfast cereals. A big, gooey slice of highland sponge cake in the aftertaste.
