Tasting Notes
We opened the day's broadsheet newspapers, each page adorned with different sweeties: gummy bears, flying saucers, bubblegum, and hundreds and thousands. The nose was sweet, delicate and lightly fragrant. The palate gave us brandy snaps dipped in peppercorn sauce, with tutti frutti ice cream on a mallow-filled wafer, accented by lemon and vanilla. Water enhanced the lemon on the nose, while adding champagne, muesli, and an uplifting and happy dessert wine. The finish was enjoyably gentle, with lighter vanillas, butter pastries and orange fondant. After nine years in an ex-bourbon barrel, we transferred this to a second fill sauternes barrique for the remainder of its maturation.
