Tasting Notes

A wonderful nose, full of restrained, heathery peat smoke, forest mushrooms, coastal freshness, dry waxy notes and more subtle aromas of beach pebbles, gorse, heather honey and sweet menthol – a super-classical Orcadian malt, we all agreed. With water we got vapour rubs, camphor and menthol balm, wintergreen and many other medicinal herbal vibes, plus hessian cloth, cedar wood and deeper, firmer, drier peat-smoke notes. The palate displayed a slightly grubbier, more 'in yer face' peat profile, along with chamois leather, boiler smoke, bonfire embers and a big, hearty, waxy texture. Water revealed a rich and superbly creamy, mouth-filling texture, along with a wonderful combination of heather honey and peat smoke, more gorse flower and more waxiness. Terrific stuff! At 12 years of age, we combined selected casks from the same distillery. We then returned the single malt into a variety of different casks to develop further. This is one of those casks.
