Tasting Notes

The Fandango is a dance for two and these two whiskies were made to be enjoyed together. This pair is an encore of sherry cask-matured delights with Spanish oak, rich fruit and sweet breakfast treats.

Cask No. 1.295: Dance in the air

We meandered towards the breakfast buffet in starched linen suits, the perfume of fine shaving soap and today's woody aftershave dancing in the air, before sitting down to gaze at a baked blueberry cheesecake sprinkled with crystal salt. Tucking in, we found buttery cinnamon toast, a glass of craft cola, dried figs and elegant spices. Water gave a candy-sweet nose, with lime juice, freshly picked strawberries and butterscotch. The palate was now nutty, served with orange and huckleberry taffy and a pinch of hops. After 10 years in a first fill bourbon barrel, we transferred this to a second fill Spanish oak oloroso hogshead for the remainder of its maturation.

Cask No. 24.188: Flamenco fruitcake

The nose danced in with rich wood oils, walnut and dried figs, swirling to the snap of castanets at a Spanish fiesta. Hints of party rings, mango and raisins tapped out a rhythmic paso doble alongside sugar puffs and pink wafers. The palate waltzed through brandy butter melting over flaming fruitcake, with port and chocolate ganache dipping in and out like a graceful flamenco twirl. With water, orange peel and poached pears played lead to tobacco and almond skins, while madeira cake and walnut added a hearty tapas plate of indulgence. Lastly, smooth nougat and praline joined a toffee and nut-filled chocolate bar lingering like a late-night fandango encore. Olé! At 10 years of age, we combined selected casks from the same distillery. We then returned the single malt into a variety of different casks to develop further. This is one of those casks.
