The sweet trolley and the herb basket

Aromas of teas and stone fruits alongside hazelnuts, cassia and candied orange arrived on the neat nose. This was followed by a palate of contrasting produce from the sweet trolley and herb basket. Flavours included cream soda with liquorice, herby popcorn, spiced rum and toffee apples, almonds and prunes, cola and cherry lips. Reduction brought a oilier feel with a continuation of the unreduced narrative: castor oil, barley sugars, travel sweets, orange fruit pastilles, micro herbs, Edinburgh rock, liquorice root and lemon thyme. The palate was very thick and mouth coating, delivering banana split, banoffee pie, dulce de leche, orange custard, pastel de nata, ginger cookies, lotus biscuits, popcorn honey, icing sugar and cedar wood.
