From a backdrop of polished wood and old dunnage warehouses came a charge of praline, walnuts and baked apples with liquorice, oranges and creme brûlée. On the palate, dark chocolate came to the rescue of Brazil nuts and coffee beans as cocoa nibs swashbuckled their way through an onslaught of vanilla slices, red apples and pink peppercorns. A dash of water unsheathed dark treacle and molasses with cherry pipe tobacco, toasted almonds and Chinese five spice. The final gallant act saw the rescue of ginger cake and nutmeg with dried herbs, chestnuts and a drizzle of olive oil. After spending 26 years in an ex-bourbon hogshead this was transferred to a first fill Pedro Ximenez hogshead for the remainder of its maturation.
