Cask No. 28.119: Spice it up after dark
Dried Fruits & Spices | Highland | 1st fill Spanish oak ex-px hogshead | 11 y/o | 60.9% ABV
We combined selected casks of eight-year-old single malt from this distillery and put the spirit into various other casks to marry and mature – this is one of those. The nose indicated caramel and dark chocolate, cheroots, leather, nutmeg and a spicy, citrus, earthy aftershave. The palate’s deep sweetness of marmalade, manuka, currants, raisins and chocolate mousse preceded a finish of dry oak, black coffee, goatskin wine, cinnamon and ginger. The reduced nose offered black tea, roasted beetroot, sawdust, rancio and humidors. Continued sweetness on the palate, now in the form of sugared almonds, honey and pastel de nata, balanced the liquorice, anise and clove that tingled in the finish.
Cask No. 39.334: Riesling spritz in the sun
Fragrant & Floral | Speyside | 1st fill ex-bourbon hogshead | 12 y/o | 57.7% ABV
A cold newspaper came spritzed with aftershave featuring accents of cedar and sandalwood, plus the zest of a blood orange. Held in the mouth, this whisky came alive, giving us buttered scones, clotted cream, vanilla and orange fondant, with a pinch of mace to accent rather than spice. Lemon verbena lingered on the dry finish. The nose was much fruitier with water, delivering glazed strawberry tarts and baked oranges splashed with white port, alongside a serving of peach jelly candies and artisan marshmallows dipped in runny icing. The palate emulated the reduced nose, with a nutmeg finish and a glass of riesling.
