Tasting Notes
The initial aroma was that of very ripe bananas in a warm Jamaican rum and raisin banana cake, followed by toasted coconut, apricot jam and tea tree oil. An explosive attack with notes of exotic fruits, nutmeg and soft tannins. After reduction aromatic depth, roundness and elegance with the scent of citrus-poached pears dusted in vanilla and cinnamon as well as cocoa beans and sultanas. On the palate, incredibly delicious with mouth-watering tropical fruits, lychees, mango, kumquat and carambola which put us all into a ruminative state of mind. Following eight years in an ex-bourbon barrel, we transferred this whisky into a second fill Sauternes barrique that previously was used to mature whisky 52.31.
