Spirit NOTES
The initial nose suggested creamy vanilla infused with light but assertive peat smoke. This then evolved towards heather and lavender smouldering to ashes. At the back we noted eucalyptus and marshmallows melting over peat embers. Water made it oilier and brought notes of linseed, heather flowers, beers, marmite and distant kelp. The neat palate displayed a wonderfully playful peatiness with leather, liquorice and some raw ginger heat. Water brought yet more notes of heather and wild coastal flowers along with mead and charring shellfish. At 9 years of age, we combined selected casks from the same distillery. We then returned the single malt into a variety of different casks to develop further. This is one of those casks.
