The neat nose bristled with slightly pickled dark fruits, then wee hints of bergamot, blood orange and candied citrus peels. The Panel also detected brown bread spread with treacle, chocolate gingers and heather honey. With reduction we found it became lighter, more aromatic and more playful, with notes of custard creams and liquorice. The palate was a little bigger than expected, with a medicinal tang of cough drops and herbal extracts. There was also a little sharp wood spice and ginger. Reduction brought marzipan, chocolate muffins, earthy tobacco notes and a hint of strawberry jam. This was matured in a bourbon hogshead for 10 years before being transferred to a second fill PX hogshead.
