Burning heather by sandy beaches joined oily mackerel and smoked salmon while heavy wafts of herbs merged with salted liquorice. The palate however was sticky and sweet with lavender honey, toffee and vanilla before herbal flavours returned alongside smouldering bonfires and fennel seeds. With a dash of water came toasted marshmallows rolled in chimney soot and coconut mixed with cocoa powder. Flavours were now a touch drier with burnt pine nuts, toasted cereals and green pesto joining lemon zest, nutmeg and menthol on the finish. At 7 years of age, we combined selected casks from the same distillery. We then returned the single malt into a variety of different casks to develop further. This is one of those casks
