Tasting Notes

Sweet, smoky and slightly grubby, the nose suggested maple syrup pancakes, salted caramel and a burning toffee factory next door to a riding stables. However, the intense palate induced head-shaking tremors of appreciation in Panel members – chocolate swiss roll and soft brown sugar, smoked paprika and black peppercorns, orange oil, charred plums and pipe stems. The reduced nose combined crème caramel, rhubarb rock and truffle honey with lavender smoke, beach bonfires and Godot’s tramps smoking cigar butts outside a municipal swimming pool. The palate, still grubby (in a good way) included briny sweet smoke, charred rosemary, marmalade, wintergreen and kippers.
