The nose evoked sea breezes wafting over rock pools and a box of fresh langoustines – the anticipated feast also had Marie Rose sauce, balsamic on hot-smoked salmon and flinty white wine to follow. Rolling waves of peat smoke crashed over our palates, accompanied by smouldering heather, sweet coconut, antiseptic cream, carbolic and musky aftershave. The reduced nose droned above the seashore and spied a farmyard – from trawlers to tractors, from creels to herbal smoke. The palate now found tart notes of lime juice and gooseberry as well as ash, blistered red peppers, smoky ancho chillies, heather, slate and liquorice – a massive dram.
