Tasting Notes
Fruit-laced marzipan and peach cobbler came accompanied by a scoop of pear and apple ice cream drizzled with molasses. The palate echoed the nose, and added orange, grape and a chewy treacle toffee texture. Water introduced cherry fondant to the nose, plus tamarind and figs baked in wet canvas. The palate finished with a spoon of chantilly cream and plum jam on a bakewell tart. After 16 years in an ex-bourbon hogshead, we transferred this to a first-fill ex-bodega PX barrique for the remainder of its maturation.
