Initial notes included squid ink, smoked sea salt, wet kelp, tarry rope, bitumen, charred lemons and creosote. Pure coastal freshness with bags of medical swagger. Water brought out oily sheep wool, bonfire embers, crushed seashells, freshly basket langoustine, herbal toothpaste and tabasco sauce. The palate held up to the promise of the nose with hot smoked mackerel, black pepper, peat smoke-infused tea, limoncello, umami paste and sardines spread on sourdough with salty butter. Reduction made it more fatty and brought camphor and putty, then the sharpness of lime juice, ginger beer, herbal bitters and lemon cough syrups. Some petrol fumes and medical disinfectant. Potent stuff!
