Tasting Notes
First impressions on the nose were of maple syrup, dulce de leche and treacle sponge pudding, with further indications of basketry, oak staves and roasted chestnuts. The palate was a well-balanced sweet and spicy combo – Dundee cake, plump raisins and blackcurrant jam, ginger fudge, sweet chilli rice crackers and cinnamon pastries. On the nose with water we found flapjacks and digestive biscuits, orchard fruits and some citrus – all scattered around a carpenter’s workshop. The palate now encompassed clove-studded oranges, cinnamon-dusted apples, mulled wine, coffee notes and tobacco. We transferred this whisky to this second fill ex-PX hogshead after five years in ex-bourbon wood.
