This was like a hug in a glass – vanilla pear syrup, chunks of pear, lemon juice, plenty of brandy and topped up with chilled soda. The liberal amount of brandy showed up on the palate with ginger and chilli heat at first but that soon subsided into a wonderfully sweet, oaty, lemony and runny honey flavour. Water added green ivy hanging on an old stone wall and granola bars on the nose while the “melt-in-your-mouth” taste was that of Vanillekipferl, crescent-shaped cookies with a heavy dusting of vanilla sugar. After eleven years in an ex-bourbon barrel, we transferred this whisky into a 2nd fill heavy toasted and medium charred hogshead.
