Tasting Notes
Two to One is the combination of two casks of single malt from the same distillery that are married before bottling. Each Two to One bottling demonstrates the Whisky Team’s skills in experimentation, flavour creation and innovation, with the whisky in each bottle coming from a different maturation journey through a range of cask types to create something unique and delicious. These cask strength offerings are bottled in our traditional green bottles and follow the usual Society bottle code format.

Tasting Notes
We tossed a fresh mango and walnut salad in honey vinaigrette alongside quince jelly with apple and sweet chilli. On the palate it was more like a slice of wholemeal toast with butter and heather honey or a spoonful of baked pear porridge with candied walnuts. Water added elderflower pastilles, blackcurrant cordial and millionaire's shortbread on the nose, while to taste we found a thirst-quenching herbal tea made from whole dried blackcurrants, berries and hibiscus flowers. The starting point for this small batch was two bourbon hogsheads of single malt Scotch whisky. One cask was transferred at 10 years old to a first fill American oak oloroso hogshead, while the other was left to mature in bourbon wood. The casks were then married together before bottling.
