Wisps of smoky bacon and smouldering leaves wafted over peppered mackerel while the black soot from a steam engine coated freshly baked bread and toasted pine nuts. The palate balanced ginger warmth with a medicinal sweetness that blended allspice and star anise with liquorice and fennel seeds on a bed of coal dust and chimney soot. Water heralded the arrival of the ferry with tar-covered ropes and steamboat smoke as we stood on rocks draped with seaweed at low tide. Dark chocolate and roasted coffee beans now merged with cask char and nut skins with a touch of mint to finish.
