We imagined walking through a banana plantation where individual bunches of bananas are encased in blue plastic bag to protect them from insects. On the palate neat, black cherry dark balsamic vinegar and a distinct peppery note. Following dilution we entered a walk-in cigar humidor, while the taste was now a lot sweeter with molasses cookies and buttered popcorn and the spiciness gentler with roasted cinnamon and nutmeg almonds. This was initially matured for 3 years in an HTMC barrique, which had previously matured ‘Texas rum’. It was then moved into this French oak barrique which matured "Texas ruby wine", comparable to Port, from a local winery.
