Tasting Notes
On the nose, sugared almonds, victoria sponge, and a maple and pecan danish mingled with summery, outdoor suggestions of carnations, beeswax, pine forests and lakeside irises. The anticipated sweetness arrived on the palate eventually in the shape of honey, condensed milk and custard creams, but only after the initial white pepper and pickled ginger heat settled down. The reduced nose became zestier, delivering refresher sweets, lemonade, strawberry tarts and stewed rhubarb – all enjoyed while making daisy chains. Some of that continued on to the palate, bringing sherbet lemons, pear drops, pineapple cubes and iced gems; it was all quite playful now, with the peppery, woody spice relegated to the finish.
