Tasting Notes
This was transferred from ex-bourbon wood into a second fill barrique, previously inhabited by whisky from distillery 53. The nose delivered smoked cured meats, cask char, pink antiseptic ointment and carbolic; charentais melon, toffee and golden syrup on burnt toast. The neat taste conveyed overdone fruitcake, honey, burnt lavender and heather sprigs, before apothecary notes on the finish. The reduced nose evoked log fires – toasting marshmallows, roasting chestnuts and s’mores; but someone’s brogues were too near the fire. The palate found ash, candied fennel seeds, liquorice imps, chewing a barbecued chicken satay stick, and the perfumed haze of a fortune teller’s tent.
