Tasting Notes
The Panel were a little taken aback by the nose on this one. We found it brimming with the impression of sweet, smouldering bonfire smoke, barbecue embers, charred pineapple, vibrant notes of tropical fruit teas and beautiful old-school herbal medicinal aspects. We thought it nosed like a much older whisky. With water it displayed that enchanting, deep, smouldering wood and peat-smoke quality, along with dried heather tossed on a peat fire, herbal teas, long-aged heather honey and whisky liqueur, and old-school waxy weight. The palate was genuinely stunning! – riddled with camphor, tar, aniseed, waxes, tropical fruits and medicines; the net effect was like sipping a 1960s Islay whisky. Reduction brought more exotic fruit subtlety, herbal peat smoke, natural tar extracts, bergamot and heather honey. We were left scratching our heads wondering what kind of alchemy had taken place here? This was matured in a bourbon hogshead for 15 years before being transferred to a first fill heavy toast medium char hogshead.
