Tasting Notes
Sniffing this (although we found vanilla and butterscotch sweetness) we mainly recalled chalky smoke drifting from the lingering embers and ash of beach bonfires, as well as barbecued prawns, toasted pistachios and a ship’s engine room. The palate, slightly briny and industrial, evoked a boat builder’s shed, but also provoked memories of a Sunday lunch, especially roasted chicken, rosemary potatoes, parsnips and chestnuts, all generously sprinkled with sea salt. The reduced nose suggested smoky bacon-wrapped figs, leather tobacco pouches, pine forest floors and an ice-cream cone in a mechanic’s hand. We now tasted seared scallops, cigars, ginger beer, pink antiseptic ointment, and eucalyptus and thymol tooth powder.
