Tasting Notes

A nose that brimmed with breads and spices to begin. Rye bread, dark roasted grains, chocolate malt, warm brioche, new leather shoes, pinecones, hawthorn and pickled ginger. Warming and welcoming in equal measure. Reduction brings the fruit! Pineapple, honeysuckle, bubble-gum, fruit salad gunk, runny honey and pineapple cubes with a dollop of lychee syrup. The mouth opens with a slick of lemon barley water, then a medical flourish of crushed aspirin, sweetened cough syrups, barley sugars, herbal cocktail bitters and some molten waxiness. With water we found a robust and soothing spiciness, creamy vanilla custard made with sweet wines, boiled lime sweets, hessian, ginger tea and a hot cross bun drizzled with lemon icing.
