Tasting Notes

This one really sung loud and clear from the top of the glass. We got a wealth of immediate aromas including limoncello, waxy honeycomb, pollens, yellow flowers and yellow plums – a very yellow nose all told. With water it revealed tiny medicinal touches of wintergreen and vapour rub, alongside white miso, stone fruits, mineral oils and sandalwood. The neat palate was sweet, giving us fruit pastille notes, citrus curds and honeysuckle, as well as a touch of lanolin and camphor. Reduction brought honeycomb, young calvados, cider apple and lemon marmalade, plus a hint of pistachio ice cream and sweet farmhouse cider too. A lovely and hugely enjoyable wee islander!
