Tasting Notes

This one was virtually clambering out of the glass! Immediate and massive notes of salty pasta water, industrial antiseptics, floor cleaner, germoline, herbal mouthwash and salt-baked white fish. Kelp, petrol, old creel nets and freshly poured tar. Whoever said this was a 'medium style' Islay? Water brought immense and pin-sharp medicines, green acidity - like a charred gooseberry - peat embers, mineral salts and sardines in smoked olive oil. The neat palate arrived on a low, rumbling bass-like thrum of peat smoke. Then natural tar, boiler fumes, raw hot grist, malt vinegar and pickled mussels. With reduction it became more complex with dried herbs, nori, sushi rice vinegar, hot chilli ramen, soy sauce, seawater and many various notes aniseed, ointments, bandages, lemon juice, miso and brine. A monster!
