Zesty lemon macaroons

A fresh and floral whiff at first of old-fashioned lemonade, jasmine, lavender and chamomile followed by mangos, candied clementine peels and sandalwood essential oil. Immediately on the palate were sharp citric notes like lemon juice concentrate or a slightly unripe green apple followed by juicy slices of mango and papaya before we finished with rhubarb and custard flavoured sweets. Water released the sweetness of teacakes, pink wafer biscuits and macaroons, while to taste the lovely creamy sweetness of a lemon meringue pie and warming liquorice. A surprising freshness in the finish combined with the spiciness of crystallised ginger.
