Tasting Notes
The initial nose was sharp and lively with the greenery of lime and kiwi. Some mint-tinged fruit salad with resinous notes of fir cones, honeysuckle, and ginger biscuits. A stick of red liquorice stirring a negroni. Water brought out softer notes of white chocolate, hay bales, chocolate lime sweets and lemon curd. The palate revealed strawberry candy floss, bubble gum and vanilla cream soda. Some matcha and toasted sesame seeds. With reduction there was a thicker texture of waxed fruits, peach stones, almonds, apple tart and things like pickled ginger, stewed cherries and raspberry macaron biscuits.
